Everyone probably has their own way to make Taco Dip/Mexican Dip/Bean Dip etc. My cousin, who had been talking about this stuff made by Goya called "Pico De Galo" and when I asked a friend who I used to work with at the store if they had it, he said they did. Nope! They didn't when I checked, he thought I meant the malted beverages! lol
So I went with Pace, mexican cheese, about a pound of hamburger (mine was a quarter more than a pound, I doubt the details matter that much) found me some velvetta cheese with jalapenos, and bought a jar of jalapenos and got myself a bag of Spicy Nacho Doritos.
I then took some stuff I already had at home, Taco Bell hot taco sauce, some Texas pete's extra hot hot sauce, left over banana peppers, rice, vegetarian beans and corn...cooked up and seasoned the meat with a variety of seasonings and made myself a nice layered mexican dip:

Good stuff! Nice thing about Mexican food is that you can have it for any occasion. Halloween, Christmas Eve, Game day etc. And incidentally, I used a heart-shaped pan, so you can probably make it for Valentine's day too...or think of the heart as the heart burn you're going to have after you eat this

I've never made a seven-layer dip, although I love to eat it. I am not into the really hot peppers, though. I would leave jalapenos out of mine.

Re: Epic Mexican Dip
lol Spooky that's a good one.
Perhaps I should have called this "Fiesta Salsa beef bean and cheese dip" or something along those lines.
It is good Murf. You might want to try milder peppers and a milder salsa for yours, and skip on the extra hot sauce. lol. Personally I like the spicey taste, but not like habanero or "ghost pepper" hot. (Even if Ghost Peppers have a Halloween sound to them. ) Just enough of a kick for flavor. But everyone has their own preference. This might be a good dish for Cinco de Mayo.
