Leftover Pumpkins?

I know... January is a long while from October. I still have two pumpkins. From my experiences last year, they aren't good for carving anymore... so I was thinking about baking 'em in the oven for some sort of rice-casserole... only I can't remember the recipe.

Are there any pumpkin recipes out there you'd like to share?

I need to get these eaten because I'd hate to throw them away! I should have 'till about April before they turn to mush... not that I've had that happen before... *whistles innocently *

Not good! Any leftover pumpkins aren;t really good.... throw 'em away! Get new pumpkins on September and October! Some are great for November! ;)

I take it as a personal challenge to find something to do with those pumpkins.... especially after being told NOT to eat 'em. Muahaha!

I suggest you to buy pumpkin pie from the bakery store, or buy a pumpkin can so you can make your own pumpkin pie. ;) Maybe make a pumpkin bread? It's really good! :D

I agree with Andy. 4 month old pumpkins are likely to be loaded with mold, or very stale.

4 month old pumpkins are very dry, not moldy and... completely and utterly useless. We threw it out around the same time we had that weird "hard freeze"...

Actually, I want COD on my headstone. It's a good way for people to associate records with bodies... and I always love reading how people died-- Boot Hill has some of the best epitaph stories.

My brother just brought over a bunch of pumpkins he bought for Halloween which spent the last few months festering in his apartment. We're gonna take 'em out back and try out a machete on them.

Still had pumpkins in January?!?

1. Carve them, light them up, place them on your porch, play scary Halloween SFX CDs, set up a video recorder in your window, record neighbors as the walk up to your yard and scratch their heads.

2. Take the pumpkins back to the store you bought them from. Tell the cashier you'd like to return them because they just don't seem very fresh.

3. Make a snowman with a jack-o-lantern head. Watch the passing cars crash as the drivers turn their heads to take a second look.

This thread is pretty old, but I say if you have a few that hang around long after the holidays this year, turn them into compost. Then buy some pumpkin at the store and make pumpkin bread or pumpkin cake!
